Wash 2 lbs chicken (breast cut up or chicken legs/thighs) in vinegar, lime and water thoroughly
Add:
sea salt to taste
sprig of fresh thyme
Jamaican style curry powder (enough to cover chicken)
1 onion
4 small potatoes peeled and cut into 8ths
Rub in and allow to marinate overnight
Wash rice (450 grams)
add water to cover and a dash of olive oil and salt
allow to come to boil
stir and lower heat until done
Add chicken into dutch pot with a bit of oil on high
Add 2 cups of water
allow to cook for 30 minutes
Serve with salad and enjoy!
